This week...

Monday: Melissa & I went to Starbucks & Target. Later we went to Zumba (dance workout)!!

Tuesday: I went to my Bible Study, watched episodes of Glee to catch up for the new episode airing that night. Tuesday evening I went to Katie & John's with Melissa and Jonathan to watch Glee.

Wednesday: I filled out an application at a hotel, for a receptionist at the hotel's spa. (My cosmetology
license still has not been transferred yet.)

Thursday: Since Zumba was cancelled, Melissa & I went to the MWR (Morale, Welfare & Recreation) travel expo. I learned that Kevin & I need to go to Orlando. After that, Melissa and I did some window shopping. Kevin didn't get off work until 7pm, I'm very thankful for frozen pizzas!! :) 

Friday (today): I'm participating in my 1st volunteer event, Fiesta Fridays: Come have fun while working with adults with disabilities on a variety of different activities varying from craft making, reading and dancing!
Then tonight I'm going to the Women's fellowship...Bunko Night at Church. Everyone has to bring a Mexican dish to share, so I'm bringing taco soup. That's right I said taco soup! I learned this recipe at Bible Study this week, and Kevin and I enjoyed it earlier in the week for dinner.


Taco Soup Recipe
Ingredients:
*  1lb chicken, ground turkey or lean beef.
* 1 large onion, chopped
* 1 (1oz) package Hidden Valley Ranch Dressing Mix
* 1 (1oz) package Taco Seasoning Mix
* 1 (16oz) can pinto beans
* 1 (16 oz) can chili beans (either hot or regular)
* 1 (16oz) can whole kernel corn
* 1 (8oz) can Rotel tomatoes
* 1 (8oz) can diced tomatoes (any flavor)

Directions:
1. Cook chicken or brown meat & onions & drain.
2. Mix Ranch and Taco seasonings into meat.
3. Put meat and the rest of the ingredients in a large pot.
4. Simmer 1 hour.

* 2 Weight Watchers points

OPTIONAL
~To give the meat more flavor, sprinkle some Worcestershire Sauce on it while cooking.
~To give the soup an extra kick add some chili powder & garlic powder.


During the week I've seen, what Kevin & I believe to be Buddy's Dad and 1 of Buddy's siblings, that I think has been abandoned. Sadly Kevin told me we can't take him/her in.

Pray for Japan, Hawaii, California and all the military being sent out to help with the Tsunami aftermath.

  1. Buddy's dad doesn't look nearly as friendly as Buddy. Thanks for the soup recipe. What are Rotel tomatoes???
